    Try this Squid with Salted Egg if you are looking for an Asian-inspired dish that combines the briny taste of squid with the rich, savory flavor of salted egg yolks.

    The other day I shared with you the Salted Egg Sauce that I use to make my Salted Egg Pasta which is a must-try! I believe you are thinking about what else to do with your salted egg sauce so today, I am making this savory and slightly salty squid recipe since you love my Stuffed Grilled Squid, Squid Adobo, and Squid Adobo with Coconut Milk.

    Salted eggs are very popular in many Asian countries. Each countries have their recipes for our star ingredient. In the Philippines, we call it "itlog na maalat" and we use it for salads, pasta, and chips. In Chinese cuisine, they include it in their mooncakes, savory buns, and as a flavoring for rice and meat dishes. Thai cuisine adds salted eggs to make "pad Thai" and various curry recipes.

    Indonesia, Malaysia, Vietnam, India, Singapore, and Taiwan have a wide and diverse range of both sweet and savory dishes as well.

    Ingredient Notes

    These are helpful notes about the main ingredients. For the exact measurement of the ingredients and printable recipe, check the recipe card below.

    • Squid: For the best squid with a salted egg dish, fresh squid is the number 1 option. However, you can use frozen squid and thaw it for easier preparation. Check out my helpful blog post on how to clean squid (fast and easy).
    • Onion and Garlic: Aromatics such as onion and garlic always add nice flavors to almost every dish I make.
    • Salted Eggyolk: I use pre-cooked salted eggs from Asian Stores.

    Instructions

    Step 1. Clean the squid:

    • Separate the head from the tubes.
    • Then cut the tentacles from the head.
    • Clean the squid tubes and remove the transparent quill that looks like plastic.
    • Peel the purple skin.
    • Sliced the squid into rings. Cut the tentacles in 1-inch sizes.
    • Wash them in running cold water.

    Step 2. Making the Sauce: Separate the egg yolks from the egg whites. In a bowl mash the egg yolks using a fork. You can use a food processor to puree the salted egg yolks for a fine texture.

    In a skillet over low-medium heat, add 2 tablespoons unsalted butter and let it melt. Add 1 teaspoon minced garlic and ½ small diced onions. Cook the aromatics in the butter until translucent. Add the mashed salted eggs and a few tablespoons of water into the skillet and mix everything until combined. Remove from the heat and set it aside.

    Step 3. Cook the Squid: In another skillet over medium heat, pour 2 tablespoons of cooking oil and saute the onion and garlic until aromatic.

    Add the prepared squid and cook for a few minutes or until it turns opaque.

    Add the salted egg sauce to the squid and stir everything to combine. Cook over medium heat until the salted egg sauce is heated thoroughly. Taste and adjust the seasonings according to your taste.

    Storage and Reheating Tips

    Storage: Store your leftovers after the dish is cooled. Transfer it to a container, cover it with a lid, and refrigerate for up to 4 days.

    Reheating: Transfer the dish into a small saucepan. Reheat over medium heat until warm thoroughly.

    Top Tips

    • Do not cook the squid for too long otherwise, it will turn rubbery and tough. When it turns an opaque color, it should be cooked already.
    • Play around with adding your favorite seasonings. Do you like spicy squid? Then add Thai red chili or cayenne powder.
    • If the dish is too salty, add sugar to balance it out. If it is too dry or the sauce is too thick, adding water can thin it out.
    • For a crispy squid with salted egg, you can cook the squid in an air-fryer to make it crunchy just follow my recipe for Air-fryer Salt and Pepper Squid and then make the Salted Egg Yolk Sauce in a skillet. Combine them when ready to serve.

    About Squid with Salted Egg Sauce

    Squid and salted egg sauce is a delicious combination. Squid has a chewy texture and mild briny flavor. The salted egg has it's rich and umami intensity.

    The salted egg yolk lent a luxurious creaminess that perfectly offset the springy bounce of the tender squid. It is salty richness seeped into every bite.

    What is salted egg eaten with?

    The best to eat with salted egg is steamed rice. The plain rice balances the salted egg's rich and savory flavor. Chopped salted eggs can be added to your salad dishes to provide a burst of salty umami taste just like my Salted Egg with Tomato Salad. They can be a flavorful addition to vegetable dishes. Add them to your stir-fries, sauteed vegetables, congee, and noodle dishes. Experiment adding them with your next dish and see if you will like them as well.

    What does squid with salted egg taste like?

    Squid is tender and slightly chewy in texture but it has a mild natural sweetness that pairs well with savory and salty egg yolks. The overall taste of this dish is delicious.

    Salted Egg Sauce

    • 3 large salted egg yolks steamed/cooked
    • 2 tablespoons unsalted butter
    • ½ small yellow onion diced
    • 2 cloves garlic minced

    • 1 large squid cut in ring sizes
    • 2 tablespoons cooking oil
    • ½ small yellow onion diced

    Instructions
     

    • Clean the Squid: Remove the head from the tube. Then separate the tentacles from the head. Remove the transparent quill and other parts from the tube. Peel the purple skin. Sliced the squid into rings. Cut the tentacles in 1-2 inch sizes. Wash them in running cold water.
    • Making the Sauce: In a skillet over low-medium heat, melt the butter. Add 1 teaspoon minced garlic and ½ small diced onions. Cook the aromatics in the melted butter until translucent. Add the mashed salted eggs into the skillet and mix everything until combined. Remove from the heat and set it aside.
    • Cook the Squid: In another skillet over medium heat, pour 2 tablespoons of cooking oil and saute the ½ small diced onions and 2 cloves minced garlic until aromatic. Add the prepared squid and cook for a few minutes or until it turns opaque.
    • Add the salted egg sauce to the squid and stir everything to combine. Cook over medium heat until the salted egg sauce is heated thoroughly. Taste and adjust the seasonings according to your taste.
