No-Bake Paleo Protein Bars

These No-Bake Paleo Protein Bars are made with only 7 whole-food ingredients. It is gluten-free, dairy-free, vegan, and very easy to make. It is perfect as a healthy pre and post-workout snack and anytime dessert.

ingredients

  • Cashews
  • Almonds
  • Pitted Medjool Dates – For sweetener and texture. You can use pure maple syrup or honey as a substitute; you need half a cup for this recipe.
  • Coconut Oil – To help melt the chocolate. You can use avocado oil or use a microwave to melt the chocolate and skip the oil.
  • Chocolate Bar – Chop into smaller pieces to melt faster and easier.
  • Cocoa Powder – Add flavor (optional)
  • Coconut Flakes – For toppings (optional)

Step by step instructions on how to make paleo energy bars.
  1. Melt your coconut oil and chocolate in the microwave for 30 seconds or longer. You can also melt it using a saucepan on low heat on the stovetop.
  2. In a food processor, combine almonds, cashews, cocoa powder, and 15 dates and start to pulse a few times. Add a few more dates and start to pulse or blend until everything is in tiny pieces. Add the rest of the dates and blend to get the right sticky consistency.
  3. Spread the dough into a baking dish and flatten it forming a rectangle shape. You can use your hand or put a parchment paper on the top and use a rolling pin.
  4. Spread the melted chocolate on top. You can top it with coconut flakes or almonds for toppings. Refrigerate and let it cool down and let the chocolate set for about 30 minutes.
  5. Slice the bars and cut them into 12-16 pieces or more depending on your portion sizes.

Storage Tips

Store your No-Bake Paleo Energy Bars in an air-tight container in the refrigerator for up to one week. You can also store the sliced bars in an air-tight container in the freezer for up to 4 months.

  • 3.5 ounces chocolate bar
  • 1/4 cup coconut flakes

  • In a food procesor or blender, combine almonds, cashews, cocoa powder, and 15 dates and start to pulse or blend a few times. Add a few more dates and start to pulse or blend until everything is in tiny pieces. Add the rest of the dates and blend to get the right sticky consistency.
  • Spread the dough into a baking dish and flatten it using your hand or rolling pin.
  • Spread the melted chocolate on top. You can top it with coconut flakes or almond halves for toppings.Refrigerate and let the chocolate to set for about 30 minutes.
  • Slice the bars into 12-16 pieces or more depending on your portion sizes. Enjoy!

Notes: 
Make a large batch ahead and store it in the freezer to stay fresh for a long time. Be sure to slice them before freezing and transfer them into a ziplock or air-tight container.
