Using a sharp knife or kitchen scissors, trim the nails and discard them. Massage with some salt and rinse the chicken feet thoroughly.
Boil the chicken feet for about 3-5 minutes on high heat and then drain the water to remove any excess protein and impurities. Discard the water.
In the same pot, bring enough water to cover all the chicken feet and let it boil. Add the chicken feet, 3 smashed garlic, 1-inch sliced ginger, a handful of onion, peppercorn, bay leaves, and a quarter teaspoon of salt.
Simmer in low heat until the chicken feet are almost tender, or about 10-15 minutes. Take them out and reserve the liquid.
In a skillet with cooking oil over medium heat, saute the rest of the ginger, then add the remaining garlic and onion. Add chicken feet, soy sauce, oyster sauce, and brown sugar. Stir and cook for 5-10 minutes.
Then add about a half cup of reserve water; add more if you want a saucy dish. Cook them on medium heat until they are tender to your liking.
Lastly, add vinegar and red chili, leave it undisturbed for 1 minute, stir, and taste test. Adjust the seasoning according to your taste. Serve with rice and enjoy!
