This Filipino Cucumber Salad also known as Filipino pickled cucumber, is a simple and refreshing side dish that’s quick and easy to make. The cool and tangy flavors are a perfect match for any main dish that’s been fried or grilled. I like it as an appetizer or enjoy it by itself.
Transfer sliced cucumber and red onion in a mixing bowl.
In a separate small bowl, combine vinegar, sliced garlic, sugar, salt and black pepper, stir to dissolve salt and sugar. Pour the vinegar dressing into the mixing bowl.
Mix everything until well combine. Enjoy!

Store your leftovers in a glass container in the fridge. This cucumber salad will turn as pickled cucumber the next day while soaking all the flavors of the vinaigrette.
