Filipino Cucumber Salad

This Filipino Cucumber Salad also known as Filipino pickled cucumber, is a simple and refreshing side dish that’s quick and easy to make. The cool and tangy flavors are a perfect match for any main dish that’s been fried or grilled. I like it as an appetizer or enjoy it by itself.

Ingredients
  

  • ½ cup white vinegar or apple cider vinegar
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon granulated sugar
  • 2 cloves garlic chopped
  • 2 large cucumber thinly sliced
  • ½ medium red onion sliced

Instructions
 

  • Transfer sliced cucumber and red onion in a mixing bowl.
  • In a separate small bowl, combine vinegar, sliced garlic, sugar, salt and black pepper, stir to dissolve salt and sugar. Pour the vinegar dressing into the mixing bowl.
  • Mix everything until well combine. Enjoy!

Notes

Recipe Notes:

Store your leftovers in a glass container in the fridge. This cucumber salad will turn as pickled cucumber the next day while soaking all the flavors of the vinaigrette.
