Ingredients
  

  • 2 tablespoons cooking oil
  • 4 cloves garlic minced
  • 1 medium yellow onion sliced
  • 2 pounds beef chuck roast cut 2-inches
  • 4 ounces mild golden Japanese curry mix
  • 4 cups beef broth
  • 2 tablespoons mirin
  • cups potatoes cut in 2 inches
  • cups carrots cut in 2 inches

Instructions
 

  • Preheat a heavy bottom skillet and pour about 2 tablespoons of cooking oil. Saute the onion and garlic until translucent.
  • Add the beef to the skillet. Sear the beef chunks on each side. Add the carrots and potatoes and slightly sear them for a few minutes.
  • Add 4 cups of beef broth or water. Bring the liquid to a boil and let the meat simmer until it is tender.
  • Then add the curry mix, and stir until it will dissolve. Cook for 10 more minutes. The liquid should turn into a thick sauce. Taste and adjust the seasoning accordingly. Serve while warm and enjoy!

Notes

  • Choose the right cut of beef. Look for chuck roast or brisket as they become very tender when braised. Cut the beef into 1-2 inch cubes.
  • Brown the beef properly before braising. This adds a lot of flavor. Pat dry beef before browning in batches over high heat for 2-3 minutes per side.
  • Simmer long enough. Give at least 1-2 hours for the beef to become fork-tender and flavors to develop fully.
  • Customize your curry. Give your curry more flavor by adding sliced apples, or honey for sweetness.
  • Add more water if you want more curry sauce. Don't forget to adjust the seasoning accordingly.
  • Serve your curry beef stew with steamed rice.
