Ingredients
  

  • 1 large cucumber diced
  • 2 large Roma tomato diced and seedless
  • ¼ cup red onion diced
  • 1 large jalapeno diced and seedless
  • 2 medium limes juiced
  • cup cilantro chopped

Instructions
 

  • Prepare all the ingredients. Remove the seeds from the tomatoes and jalapeno. Chop the vegetables in small, uniform pieces.
  • Combine the cucumber, tomatoes, red onions, jalapeno, and cilantro in a bowl. Squeeze the lime juice. Mix everything until well combined. Taste and adjust the seasoning with salt as needed. Let it set for a few minutes to release more flavors together. Enjoy.

Notes

STORAGE TIP:

Store this fresh pico de Gallo in an air-tight container in the refrigerator for up to 3-5 days. It will lose the crispiness, but it will still taste delicious.
