Ingredients
  

  • 16 ounces yakisoba noodles
  • 2 tablespoons cooking oil
  • 1 teaspoon garlic minced
  • 1 small yellow onion sliced thin
  • 8 ounces baby Bella mushrooms
  • 1 medium zucchini
  • 3 tablespoons ketchup
  • 4 tablespoons hoisin sauce
  • ¼ teaspoon salt more if needed
  • ¼ teaspoon black pepper

Instructions
 

  • Cook the yakisoba noodles according to the package instructions. Drain the water, then rinse it with cold running water.
  • In a skillet or wok over medium heat, heat 2 tablespoons of cooking oil. Cook garlic and onion until the onion becomes translucent.
  • Add mushrooms and cook until it softens.
  • Add the zucchini and other veggies if using. Stir-fry the vegetables for about 2-3 minutes or until tender-crisp.
  • Add the cook noodles, ketchup, hoisin sauce, salt, and black pepper. Toss them and stir fry on high heat for 2 more minutes. Taste and adjust according to your taste. Serve and enjoy!

Notes

Recipe Notes:
  • Do not overcook the noodles. Cooking them for about two minutes in boiling water is enough. Be sure to drain the water and rinse the noodles in cold running water to remove excess starch and salt and to stop the cooking process.
  • Use fresh and vibrant vegetables if possible. Sliced them in uniform size for even cooking.
  • Cook the vegetables to the right doneness. The key is to stir-fry them in high heat to retain the texture, color, and freshness. They should be tender-crisp and not mushy.
  • Customize the sauce according to your taste. The sauce is one of the bases of a flavorful veggie yakisoba dish. If you want more sweetness, add 1-2 tablespoons of brown sugar or ketchup. For a spicier taste, add a tablespoon of sriracha or chili sauce is perfect.
  • You can add some protein. If you are not vegetarian, you can add animal protein such as chicken, beef, or seafood.
  • Add garnish, such as chopped herbs and sesame seeds.
  • Allow the leftover stir-fried noodles to cool, and transfer them to a glass container with a tight lid. Store in the refrigerator for up to 5 days. If you plan to store them longer, you can freeze cooked yakisoba noodles in the freezer for up to 3 months. Thaw in the countertop for a few hours.
