- Yakisoba Noodles - Typically called Japanese Style pan-fried noodles that you can find in the refrigerated section of your Asian store. You can also check the frozen area for frozen yakisoba noodles. If you can't find yakisoba noodles, use any type of egg noodles instead.
- Aromatics - Yellow onions and garlic.
- Zucchini - Zucchini is a perfect match for mushrooms, but feel free to add more colorful vegetables. The more veggies, the better!
- Mushrooms - I use sliced baby Bella mushrooms. Any type of mushroom work for this vegetarian and vegan yakisoba recipe.
- Sauce - The sauce for this vegetarian yakisoba is hoisin sauce, ketchup, salt, and black pepper. It is very minimal and accessible in any kitchen. You can also add a tablespoon of sesame oil to add a nutty flavor.
Instructions
Making vegetable yakisoba is simpler than you think. Prepare all your ingredients by slicing the vegetables, mushrooms, and aromatics before start cooking for a smooth and ready-to-go procedure.
Step 1. Cook the yakisoba noodles in boiling water for 3 minutes. Drain in a colander and rinse with cold water. Do not overcook the noodles.
Step 2. In a skillet, heat cooking oil on medium heat. Cook minced garlic and sliced onions and saute until onions become translucent. Then add the mushrooms and cook until softened, about 3 minutes.
Step 4. Add the zucchini and other veggies if using. Stir-fry the vegetables for about 2-3 minutes or until tender-crisp.
Step 4. Add the cook noodles, ketchup, hoisin sauce, salt, and black pepper. Toss them and stir fry in high heat for 2 more minutes. Taste and adjust according to your taste. Serve and enjoy!
