This Filipino Vegan Pancit is very easy to make and loaded with delicious and colorful vegetables with rice noodles that are very easy to make. Chewy, tasty, and flavor-packed rice noodles that you can make with minimal ingredients anytime at home.
Pancit is a traditional Filipino dish that is made with rice noodles, some protein, and vegetables. There are so many varieties when it comes to Filipino pancit and all of them are delicious. If you go to any occasions or parties pancit is always present on the menu because it is everybody's favorite of all times.
This Filipino vegan pancit to me is very special to me since I am leaning towards eating more vegetables and less meat if I could. Vegan or meatless meals are great meals to give yourself a break from eating meat. I believe that everything in moderation is the best practice. Eating more vegetables is good for your body, soul, and mind but also great for our planet. So I encourage everyone to try this Filipino vegan or meatless pancit if you are a fan of a chewy, delicious, and flavorful rice noodles recipe.
INGREDIENTS AND SUBSTITUTIONS
- Pancit Bihon or Rice Noodles - This type of noodles are usually available at Asian grocery stores and online retailers. There are different brands you can try. Look for "bihon" in the package if you are making pancit bihon.
- Cooking oil - Neutral cooking oil such as vegetable oil or avocado oil is the best recommendation.
- Garlic and Onion - It is best to saute your vegan pancit with onion and garlic. I love the aroma and they. It also adds flavors to our pancit. Skip garlic and onion if you are not a fan of the smell.
- Soy Sauce - Tamari sauce is a great and gluten-free substitute. You can also use fish sauce or just salt to season it.
- Vegetables - Cabbage, carrots, bell pepper - This are some of my favorite vegetables and it is what I have in the fridge. You can add your favorite vegetables to the noodles or use what you have. This dish is the best way to clean your fridge.
- Salt and pepper - To taste.
- Tufo - Substitute for meat.
- Calamansi slices- To add tangy sourness. Lime, lemon slices or vinegar to substitute
- Green onions - To garnish
Pancit has evolved in Filipino cuisine with the combination of both Chinese and Spanish techniques, as well as using local ingredients. Pancit is most commonly cooked by sautéing onion, garlic, vegetables like carrots, cabbage, bell pepper, green beans, celery among others, and meat and seafood. Soy sauce is the common and best sauce used to season pancit. Calamansi slices is served on the side to add tangy sourness.
HOW TO MAKE PANCIT?
- Start by heating oil in a large wok or skillet over high heat. Saute onions and garlic. Cook just until they are translucent and you can start to smell the aroma of onions and garlic.
- Tear the rice noodles apart and add into the wok with soy sauce and water or vegetable broth.
- Let the noodles cook in medium heat until the noodles absorbed most of the liquid and the size doubled but make sure that it is not dry. If it is dry, just add ¼ cup of water.
- Toss all the remaining vegetables and stir-fry for 5-10 minutes just enough for them to cook but it is best to retain the firm texture. Season with salt and pepper if needed. Serve and enjoy!
HOW TO COOK TUFO?
- Drain excess water from the tufo by gently pressing it down and squeeze. Or using paper towel to pat dry it.
- Slice in bite size cube shape.
- Deep fry them in 1-2 cups of oil. The cooking oil needs to be hot enough so the tufo will turn nice and golden brown and will not stick together with a firm texture.
- Drain all the excess.
Rice noodles are dry because it needs more water or vegetable broth.
Pancit is an authentic Filipino noodles dish.

COOK'S TIPS
While preparing for other ingredients, soak the rice noodles in just enough water to submerge the noodles. In 10 minutes the noodles will absorb most of the water and it will turn soft and double in size. This is to cook the rice noodles quicker and faster.
STORAGE TIPS
Store in an air-tight container in the fridge for up to 5 days or in the freezer for up to 3 months. Thaw in the fridge overnight or on the countertop and reheat it in the stovetop, microwave, or oven.
