Chicken Mami is a popular chicken noodle soup dish that originated in the Philippines. Although, in the Philippines, we don't have winter, the cold months from December up to February are cold. And our monsoon season and rainy days are from June to November. This chicken mami soup, arroz caldo, and pork macaroni sopas are often served on cold and rainy days.
Chicken Mami can easily be found in many food stalls, restaurants (karendiria), and street vendors across the Philippines, and it has become a beloved part of the country's culinary heritage. It is often served for breakfast, lunch, or dinner.
Ingredients
- Egg noodles: Fresh or frozen egg noodles are perfect to make chicken mami. This is widely available at most Asian stores.
- Chicken: Chicken breast or chicken thigh for protein. Chicken thigh has a lot more flavor and doesn't tend to dry after cooking compared to chicken breast. You can also use beef or pork to substitute chicken.
- Chicken Broth: For the best result, use homemade bone broth, it will give so much flavor. This is the base of this soup. Try my bone broth recipe.
- Vegetables: For this pancit mami, I am using the same vegetables I used for pancit bihon. Thinly sliced carrots and shredded cabbage will add texture and flavor to this dish.
- Toppings: The toppings should be added to each bowl before serving. The best toppings for this warm soup are boiled eggs, toasted crispy garlic, calamansi, and chopped green onions.
Instructions
- Cook the egg noodles according to the package instructions. Boil enough water with a pinch of salt. Drop the egg noodles for 1-2 minutes. Then rinse with cold water to stop the cooking process. Do not overcook the noodles.
- In a large pot, combine the chicken, chicken broth, soy sauce, and a pinch of salt and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the chicken is cooked through. Save the broth.
- Shredd the chicken into tiny pieces. Prepare the toppings such as crispy garlic, boiled eggs, chopped green onion, and lemons (if using).
- Divide the cooked noodles into 4 large bowls. To each bowl, add chicken meat, shredded cabbage, and carrot strips. Pour about a cup of hot broth into each bowl. Let the vegetables cook in the hot chicken broth for a minute.
- Serve the soup hot, and top with cooked eggs, crispy toasted garlic, calamansi juice, and green onions, if desired. Season with fish sauce or salt and pepper.

- Use homemade chicken broth or a high-quality store-bought one to enhance the flavor of your soup. You can also add some herbs and spices such as bay leaves, thyme, and black pepper to add depth to the flavor.
