Ingredients
- Pork Tenderloin - Slice your pork thinly in bite sizes so that it cooks faster and you don't need a knife to slice it later.
- Asparagus - When choosing asparagus, it is best to pick a vibrant green and firm texture for freshness.
- Onion - Onion adds sweetness and aroma. Use yellow or white onion slices.
- Marinade - For the marinade, I use soy sauce, oyster sauce, brown sugar, black pepper, and baking soda. I use baking soda to tenderize the pork.
How To Make Pork and Asparagus Stir-fry
Slice your pork in small thin pieces. Transfer them to a mixing bowl. Add the soy sauce, oyster sauce, black pepper, brown sugar, and baking soda. Marinate them for 15 minutes or longer.
Trim the asparagus and discard the woody and tougher ends. Don't throw them away, and instead you can make vegetable broth using the woody parts of the veggies. Cut them in 2-inches.
Preheat a wok or skillet and let it reach smoking point. Pour 2 tablespoons of cooking oil. Let the oil heat up over high heat and stir-fry the marinated pork. Stir fry the meat until golden brown, stir continuously.
Add the sliced onion and stir-fry for a minute. The onion will release it's sweetness at this point.
Add the asparagus and stir-fry for 3 minutes or until it is tender-crisp. Taste and adjust the seasoning according to your preference. Serve and enjoy!
Helpful Tips
- Use fresh asparagus for the best result. Asparagus should be firm and wilted. The color should also be bright green.
- For any stir-fry dishes, use high heat. High heat will help to cook your ingredients faster while retaining their crispness and color. Make sure your pan is hot before adding ingredients, and keep the heat high throughout the cooking process.
- Cook your meat first until it's almost done before adding vegetables. This ensures that the meat gets a nice sear and doesn't overcook while the vegetables are cooking.
