Adobong Sitaw is a popular Filipino dish made with (sitaw) long beans or green beans, which are cooked in a savory sauce made from the combination of tangy and savory flavors of soy sauce, vinegar, along with aromatic garlic and onion, and other spices.
In a skillet over medium heat, preheat cooking oil. Sauté the garlic and onion until fragrant and translucent.
Then add the sliced pork loin and cook until light to a golden brown, stirring occasionally.
Then add the sitaw, soy sauce, and brown sugar. Toss to combine and cook for 5 minutes or until the beans are cooked but not soft. You may want to add water if you want a more saucy adobo.
Lastly, add the vinegar, leave it undisturbed for the vinegar to cook for a minute, then stir to combine all the flavors. Do a taste test and adjust accordingly with salt and pepper.

For spicy sitaw adobo, you can add chopped red chili or serrano pepper. Start by adding just 2 large pieces and more if needed.
This dish usually serves as a main or side dish with cooked white rice.
You can use a different type of protein, such as ground meat, seafood, and tofu, for this recipe.
