    This quick and easy vegetarian Mushroom Egg Fried Rice dish is a delicious one-pot meal. It combines the earthy and umami flavors of mushrooms with the richness and savory goodness of fried rice. This dish makes a satisfying and filling meal that's perfect for breakfast, lunch, or dinner. You can customize it by adding a mix of vegetables or extra protein sources of your choice.

    Oftentimes, I cook more than enough rice and I always think about how to transform these leftovers. I have different types of fresh mushrooms in the fridge and also dried shitake mushrooms in the pantry to keep and use when needed. Mushrooms are one of my favorite ingredients for fried rice and all kinds of tasty and savory dishes!

    Ingredients and substitutions

    With minimal ingredients from your kitchen, you can make a yummy dish that everyone will enjoy and love. I wrote some helpful notes to make this dish a success. Check the recipe card for a printable version with exact measurements and instructions below this post.

    • Leftover rice - Leftover rice that's been chilled in the refrigerator is perfect for cooking in stir-fried rice recipes. It is because they are firm and separate easily. You can use cooked white or brown rice.
    • Cooking oil - Use a neutral-tasting and high-heat tolerance oil such as avocado oil or vegetable oil.
    • Mushrooms - They add earthy and savory flavor and texture. Any type of mushroom is a great option. Fresh and dried mushrooms work best for fried rice.
    • Eggs - For extra protein.
    • Vegetables - Fresh or frozen vegetables. Use what is available in your fridge at the moment. I use frozen peas.
    • Soy sauce - For extra umami flavor.
    • Herbs - Chopped green onions or cilantro for garnish.

    Instructions

    You can whip this dish in less than 15 minutes from start to finish with just a few easy steps. Let's start preparing your ingredients. Mince the garlic, chop the onion, vegetables, and herbs, and slice the mushrooms.

    Step 1. Heat a large wok or skillet over medium-high heat. Add 2 tablespoons of cooking oil and swirl it around to coat the pan evenly. Add the beaten eggs to the pan and scramble them until they are fully cooked. Take out the scrambled eggs from the pan and set it aside.

    Step 2. In the same wok, add the remaining 1 tablespoon of oil. Saute the diced onion and minced garlic for a minute or until translucent.

    Step 3. Add the mushrooms and the peas and stir-fry for 2-3 minutes or until they start to soften.

    Step 4. Add the cooked rice, oyster sauce, and soy sauce to the pan. Stir fry everything for about 3-4 minutes. Make sure the sauce is evenly coated and the rice is well mixed with vegetables and mushrooms.

    Step 5. Return the scrambled eggs. Stir and make sure that everything is well incorporated. Stir-fry for another 1-2 minutes to combine everything. Taste and adjust your seasoning accordingly. Sprinkle chopped herbs for garnish.

    Storage and reheating Tips

    • Refrigerator - Cool down completely your leftover fried rice and store it in an air-tight container. Consume up to 3-5 days.
    • Freezer - The mushroom vegetable fried rice is freezer-friendly but the texture of the mushrooms may change. It will last a long time in your freezer. Transfer into a freezer-friendly container and store in the freezer for 3 months. Thaw in the refrigerator overnight or on your countertop until it reaches room temperature.
    • Reheating - Reheat your leftover dish on the stovetop using a skillet. Sprinkle some water if you think it dried out. Heat until warm thoroughly. You can also use the microwave. Microwave for 1 minute in a glass or microwave-safe container.

    Helpful Tips

    • If you just had newly cooked rice and want to make fried rice sooner, allow it to cool and dehydrate in the countertop while you get the other ingredients ready. Use slightly less water, around 10% less than your usual ingredients the next time you will cook for fried rice.
    • Make an effort to break up any big clumps of rice before you start cooking.
    • If you’ve cooked rice with the express purpose of making fried rice, let it cool off and dry out on the counter while you prep the other ingredients. You can also add about 10% less water than you normally would. If you are using cold leftover rice, try to break up the large clumps as best as possible for cooking. 
    • Cook in high heat - Use a hot wok or skillet for stir-fry dishes. High heat helps to quickly cook the ingredients, keeping them crisp and flavorful. Make sure your pan is well-heated before adding oil and ingredients.
    • Sauteing minced garlic and chopped onions until fragrant. This infuses the oil with garlic flavor, enhancing the aromatic taste of the dish. You can try this Crispy Garlic with Garlic Oil and add it to the dish too.
    • Gentle stirring - Stir the ingredients gently and continuously to ensure even cooking and to prevent sticking or burning. Use a wooden or wok spatula for the best result.

    Your Questions and the Answers

    What kind of mushrooms are best for fried rice?

    Use any type of mushrooms that are available at your place. Fresh or dried are the best but I am going to share my top 3 choices:
    1. White button mushrooms, baby bella mushrooms, or cremini mushrooms which are commonly found and considered the classic, got-to-choice because they are widely available.
    2. Fresh or dried shitake mushrooms are also widely available and inexpensive. Dried shitake mushrooms are shelf-stable and great for all kinds of other recipes, too. Be sure to rehydrate them.
    3. Oyster mushrooms are also called seafood mushrooms because of their seafood taste-like. This is available in most Asian Grocery Stores.

    What vegetables can I add to the recipe?

    You can add a variety of vegetables to customize your mushroom fried rice. Some popular choices include corn, peas, carrots, green beans, broccoli, and broccoli. Chop or dice them into small pieces for even cooking.

    What can I serve with this recipe?

    This dish is already a complete meal on its own, but you can also serve it with additional side dishes like vegetable lumpia, simple salad, or bowl of mushroom soup.
