This recipe is for you if you want to make an Easy Air Fryer Roasted Zucchini. This is a simple and flavorful zucchini side dish that is perfect to serve on busy weeknights. It takes less than 15 minutes from start to finish and the result is a tender-crisp zucchini.

- Zucchini - Use fresh zucchini.
- Dry Oregano - You can use your favorite dry herbs such as thyme, rosemary, and Italian seasonings.
- Olive Oil - It's okay to use any neutral oil such as avocado oil and vegetable oil.
- Parmesan Cheese - Optional
Instructions
Making Air Fryer Roasted Zucchini is quick and easy just like my Air-fryer Roasted Asparagus with Parmesan. Be sure to preheat your air fryer. If your air-fryer doesn't have a preheat button, you can preheat it at 400F for 3 minutes.
Let's begin the recipe, wash the zucchini and cut off the ends. Then cut it into slices. There is no need to peel the zucchini.
Combine the olive oil, salt, garlic powder, and dried oregano together.
In a bowl, combine the sliced zucchini and olive oil mixture together.
Place into the air fryer basket, sprinkle parmesan cheese if you are using it, and air fry at 400 Fahrenheit for 10 minutes.
Once the zucchini is done roasting, remove it from the air fryer basket and place it on the serving plate of your choice to enjoy!
Variations
- Zucchini Varieties - There are plenty of different zucchini with different shapes and colors. You can use any type. The popular ones are yellow and golden zucchini.
- Spicy - If you want to add a kick of spice, add some red pepper powder or cayenne powder.
- Cheese - For more cheesy goodness, you can sprinkle your favorite shredded cheese. I love parmesan cheese on mine.
Storage
Storage - Transfer the dish after cooling. Store it in the refrigerator for 3 days. The zucchini has a lot of water content and it will produce more water after sitting in a container in the fridge. This is normal so it is best to eat right away after cooking.
Reheat - To reheat this dish, transfer it into a small saucepan and reheat on medium heat until warm thoroughly.
Helpful Tips
- Don't skip to preheat your air fryer. Preheat it to 400F if it doesn't have a preheat button. Use the highest temperature to roast the vegetables perfectly.
- Don't overcook the zucchini in the air fryer. Be sure to check it after the 10-minute mark.
